We took pictures of all the steps so I thought I would post them in case anyone else wanted to make these.
First you disolve unflavored gelatin in water in the bowl of your stand mixer.
Then, in a saucepan you cook together the water, corn syrup and sugar - lots of sugar! Then you let it boil until in reaches 128 degrees.
Then you slowly pour the hot sugar mixture into the mixer with the gelatin and start mixing it up. You let it mix on high for like 12 or so minutes. After you finish pouring in the hot sugar it helps to have an adorable assistant watch the mixer to make sure everything is going well.
Within a couple of minutes it starts to get white and fluffy, it is kind of amazing!
After 12 minutes you have a little taste to make sure it is good. Babies love marshmallows!
Then you spread it out into a baking dish and set aside for a couple of hours for it to dry and get less sticky (although it will still be crazy sticky and a pain in the butt to get out of the pan)
After all the marshmallow goo is spread out in the pan, give the spatula to your assistant and she will very kindly share it with her sister. As I mentioned before, babies LOVE marshmallows!
So do big girls!
In a couple of hours, take your marshmallows out of the pan, cut them into squares and dip them in dark chocolate and coconut and try not to eat them all at one time. Because they are DELICIOUS!!!
